Rasmus Kofoed is one of the most determined guys we know, and spent 1,000 hours practising last year in order to win the gold medal at Bocuse D’Or 2011, the unofficial World Championship for chefs.

Danish chef, Rasmus Kofoed, won the gold medal at Bocuse D’Or, the unofficial World Championship for chefs, in January 2011. But when the Michelin Guide awarded their coveted stars on Wednesday 16 March, 2011 they snubbed him and partner, Søren Ledet, with a “Rising Star”.
We still find the business partners’ new restaurant, Geranium, lives up to Thomas Kofoed’s title as the best chef in the world, and deserves a visit.

Thomas Kofoed is a Competitive Spirit
“I spent 1,000 hours practising in 2010,” said Danish chef Rasmus Kofoed, as he won the gold medal at Bocuse D’Or, the unofficial World Championship for chefs, in January 2011. Rasmus Kofoed is one of the most determined guys we know. Most chefs would have been happy with the bronze medal he won at Bocuse D’Or 2005, or the silver medal at Bocuse D’Or 2007. But Rasmus Kofoed is a competitive spirit. So on top of opening Geranium, a new high temple of gastronomy, with his partner Søren Ledet, he turned up the volume for the heavy metal music on his boom box (so he could stay focused at an extreme sound level), and went into intensive training for the gold medal …

Meals that involve All Senses
Passion and determination also characterises the kitchen at Geranium, which the partners call “lucid, light and dynamic”. They add: “Our mission is to create meals that involve all our senses – restores, challenges, and enriches.” True to their mission the guys have ensured beautiful and well-designed facilities on the 8th floor at Parken (home to Copenhagen’s foremost football club FCK), where you can see the change of the seasons through the tree tops, and catch glimpses of the city’s green copper roofs and the windmills in Oresund.

Book Your Table Months in Advance
Geranium is open Wednesday to Saturday 6 pm-9 pm (1 am), when the best chef in the world invites you to try Geranium’s regular menu, the green menu or enter “our universe”.
If you want to judge by yourself whether they deserve a “Real Star” in the Michelin Guide 2012 we suggest you book a table a long time in advance at Geranium.dk.

And of course there are differences in vintages, regions, winemaking styles, and oak-aging regimes. One way to separate wines is into one of three broad categories: (a) wines that age, (b) wines that do not, and a third sort of gray area in which a wine may or may not age well based on various situations.
